Going into the new year of 2021, our previous line of Huta Raja Specialty Arabica green beans is now ‘Siamang Forest Coffee’. In 2020, many of us faced economic challenges created by the global pandemic. Many smallholders chose not to invest in maintaining or harvesting their arabica crops and instead focus on short term crops. We understand their choice and support them in their efforts to support their families during this difficult time in our economy. In order for L&L Organic to remain sustainable, we adjusted our sales focus on smallholder farmers green coffee to support those who chose to remain diligent in their arabica coffee production. 

Our farmer group leaders, Ralen and Joel  continue to serve their community and their extended families who grow and supply cherry for L&LO. We appreciate the support from our Roaster Partners, Thank You! Your partnership makes a difference in quality of life for families and in preserving the Siamang Forest that is part of our farm in Simalungun. Process:Dry Natural
Bean size is Screen 17-15
Moisture: 11.5% +/- (.5)
Selective harvesting, followed by further selection during drying process. Dried on raised beds outside and inside covered greenhouse for 4-6 weeks. Machine hulled and sorted followed by hand sorting for near 0 defect. Rested in Grainpro bags.
Cupping notes: Complex and clean; Floral; Berries; Ripe Mango; brown sugar; honey; Juicy acidity; Creamy mouthfeel. Long, sweet finish.

Process:®Nira Yeast Fermentation | Fully Washed | Dry or Wet Hull 
Bean size is Screen 17-15
Moisture: 11.5% +/- (.5)
Selective harvesting followed by cherry selection before pulping. Single fermentation bath with our ®Nira Yeast before fully washing the mucilage. Parchment or Seed is dried on raised beds outside to 11-12% Moisture.  Machine sorted for near 0 defect. Rested in Grainpro bags.

Cupping Notes: vanilla, apple, brown sugar; tangy acidity and rich syrupy body and mouthfeel. Long aftertaste with peach notes.

Process:®Nira Yeast Fermentation | Double Soak | Fully Washed
Moisture: 12% +/- (.5)
Selective harvesting followed by cherry selection before pulping and parchment selection after pulping. A Nira Yeast fermentation results in a complex bouquet of fragrance and flavors. Two separate fermentation baths over 48-hour period; Parchment is soaked twice and mucilage is fully washed before drying on raised beds outside and inside covered greenhouses for up to 4 weeks. Machine hulled and sorted for near 0 defect. Rested in Grainpro bags.

Cupping notes: Bright, Sweet, Complex flavors of citrus, brown sugar, lemongrass, roasted nuts. Excellent espresso layer to heavier blends to create a cleaner yet more complex profile; available upon request only.
